Soya Kebab Masala Recipe

Soya chunks not only taste delicious but are very healthy and nutritious too. I had these amazing soya kebabs in thick gravy in Delhi and have been trying to replicate the same in my kitchen for days. Finally I have found a recipe which is close to the typical Delhi street food taste. This is my version of soya kebab masala, a yumm soya kebab fried with onions and capsicum on a satay stick and served with delicious onion tomato gravy.

  • Soya chunks  – ½ cup (soaked and drained)
  • Thick yogurt – 1 cup
  • Ginger- Garlic paste – 2½ tbsp
  • Gram flour (besan) – 3 tbsp
  • Lemon juice- 1 tsp
  • Turmeric powder – 1½ tsp
  • Salt – to taste
  • Carom seeds (ajwain) – ¼ tsp
  • Green capsicum – 1 medium  (diced)
  • Onion – 1 medium (diced)
  • Cumin seeds (jeera) – 1 tsp
  • Asafoetida (hing) – ¼ teaspoon
  • Onions  – 1 large cup (finely chopped)
  • Tomatoes  – 1 large cup (finely chopped)
  • Red chilli powder – 1 tsp
  • Coriander powder – 1 tbsp
  • Garam Masala -2 tsp
  • Hung yogurt – 3 tbsp
  • Fresh coriander – for garnish
  • Oil – 4 tbsp


  • In a bowl add yogurt,1 tbsp ginger-garlic paste, gram flour, lemon juice, ½ tsp turmeric powder, carom seeds and salt and mix well. Add 2 tbsps water and mix to make a smooth batter.
  • Using a satay sticks or toothpicks tread in the soya chunks, capsicum and onions.
  • Coat the soya chunks, capsicum and onion on satay sticks with gram flour batter and shallow-fry in hot oil till brown and crisp on all the sides.
  • Simultaneously,heat 4 tbsps oil in a non-stick pan, add cumin seeds, asafoetida and chopped onions and saute till lightly browned.
  • Add remaining ginger-garlic paste and tomatoes and mix well. Cook till the tomatoes become soft and pulpy.
  • Add red chilli powder, coriander powder, remaining turmeric powder and garam masala and mix well
  • Next add salt and mix well followed by hung yogurt and mix well. Add 1 cup water and fried ingredients and mix well. Cook on high heat for 10-12 minutes.
  • Garnish with chopped fresh coriander and serve hot.
